I love thoses cookies as they are crunchy on the outside yet chewy in the inside.
Makes 24 + cookies Time: 2h45 (includes 2h15 in the fridge and 10 min baking) INGREDIENTS 1 1/3 cup of flour 1 tsp baking powder 1/2 tsp salt 1/4 cup butter at room temperature 1/4 cup salty butter at room temperature (I like it salty but you can use unsalty if you want) 3/4 brown sugar 1 egg 1 cup of mini dark chocolate chips METHOD
- Preheat oven 200°c
- In a bowl stir flour, baking powder and salt. set aside
- With hand mixer, cream butter and sugar until very creamy.
- Add the egg and mix until well combined
- Add the flour mixture and mix on low speed until well incorporated
- Using a spatula or wooden spoon, stir in the chocolate chips
- Put in the fridge for 2h and then in the freezer for 15 minutes
- Take out a cookie baking sheet or baking paper parchment and drop tablespoon size balls of dough, 5 cm apart.
- Put the cookies in the middle of the oven.
- Bake for 8-10 minutes or until golden brown on the edges.
- Take out and let them cool to room temperature before taking them off the sheet.
- Try one and store in tin box or plastique container.
