Crunchy oatmeal energy bites

I love homemade snacks πŸ™‚ there is nothing I can do about it… DSCF2920 Time: 1h35 (includes 1h to chill, more time if you need to make many batch)

INGREDIENTS 1/2 cup unsalted butter at room temperature 2/3 cup raw sugar 1 egg 3/4 cup flour 1/2 tsp baking soda 1/2 tsp salt 1/2 tsp cinnamon 1 and 1/2 cups whole rolled oats ( 180g) 1/2 cup raisins 1/4 cup slivefied blanched almonds

METHOD

  1. With hand mixer on medium speed, cream together butter and sugar until texture whitens
  2. Add the egg and mix well together
  3. In a separate bowl, mix flour, baking soda, salt, cinnamon
  4. Pour flour mixture in butter mixture and mix with hand mixer on low speed
  5. With a big spoon, stir in the oats, raisins and almonds until well incorporated
  6. Cover with cling film and put in the fridge for 1 hour. Preheat oven 180Β°C
  7. Scoop out 1/2 tablespoon-sized balls of dough onto baking sheet about 5cm apart
  8. Bake for 15 minutes
  9. Let cool.
  10. Enjoy immediately or put in tin or tupperware box and save it for later.
