I love homemade snacks π there is nothing I can do about it…
Time: 1h35 (includes 1h to chill, more time if you need to make many batch)
INGREDIENTS 1/2 cup unsalted butter at room temperature 2/3 cup raw sugar 1 egg 3/4 cup flour 1/2 tsp baking soda 1/2 tsp salt 1/2 tsp cinnamon 1 and 1/2 cups whole rolled oats ( 180g) 1/2 cup raisins 1/4 cup slivefied blanched almonds
METHOD
- With hand mixer on medium speed, cream together butter and sugar until texture whitens
- Add the egg and mix well together
- In a separate bowl, mix flour, baking soda, salt, cinnamon
- Pour flour mixture in butter mixture and mix with hand mixer on low speed
- With a big spoon, stir in the oats, raisins and almonds until well incorporated
- Cover with cling film and put in the fridge for 1 hour. Preheat oven 180Β°C
- Scoop out 1/2 tablespoon-sized balls of dough onto baking sheet about 5cm apart
- Bake for 15 minutes
- Let cool.
- Enjoy immediately or put in tin or tupperware box and save it for later.
