Fluffy healthy chia seeds and blueberry muffins. For adults AND kids.
Chia seeds are a great source of healthy omega-3 fats and fibre: boosting energy (exactly was we need here in S’pore with the heat!), stabilizing blood sugar, aiding digesting and lowering cholesterol.

Makes 12 muffins
INGREDIENTS
1/2 cup sweet creamy butter, softened
2/3 cup sugar
2 large eggs, separated
1 1/3 cups flour
3 tsp baking powder
2 tbsp chia seeds
2 lemons, zest of, grated
1/4 tsp salt
1/2 cup milk
2 tbsp lemon juice
some vanilla
125g blueberries
RECIPE
- Preheat oven to 180°C
- In bowl 1, cream the butter and sugar until fluffy.
- Add the egg yolks, beat well
- In bowl 2, stir together chia seeds, flour, salt, baking powder and lemon zest.
- With the hand mixer on low speed, add bowl 2 to the creamed mixture in bowl 1.
- Then add milk, lemon juice and vanilla. Beat just until smooth.
- In another bowl 3, beat the egg whites until soft peaks form. Gently fold them into the muffin batter until blended.
- Gently add the blueberries.
- Spoon the batter into the prepared pan, 3/4-full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for 5 minutes before removing to cool completely ( if not it will stick).
Can be stored in a container for about 1 week.
