CHUT… THIS SECRET CANNOT BE SHARED.
This chocolate mousse is extremely easy to make. You can’t get it wrong, really. It is my mother’s recipe .
Side note: the eggs are raw, they will not cook, that is just the way a chocolate mousse is, do not be surprised. Use fresh eggs, organic is even better.
Serves 6
Time: 20 minutes + 2h minimum in the fridge
INGREDIENTS
6 eggs at room temperature
200g dark chocolate chips or baking chocolate
2 tbsp of raw sugar
RECIPE
- Take out 3 bowl: 1 small, 1 medium that goes in the microwave, 1 large
- Separate egg white from yolk. put the white in the large bowl and the yolk in small bowl
- Put the chocolate in medium bowl and melt on low microwave heat.
- While chocolate is melting, beat the eggs whites + sugar until they are really firm. (you should be able to put the bowl up side down and the egg whites will not spill). Set aside.
- Using a hand mixer, mix the egg yolk and the melted but not hot chocolate.
- Pour the chocolate+yolk mixture over the beaten egg whites, using hand mixer on high speed, mix well together for 1 minute. The result is a bit liquid, it is normal, it will harden in the fridge.
- Pour in a serving bowl or in individual cups and place in the fridge for at least 2 hours.
